Sweet Potato Beignets with Cinnamon Sugar
Category: Sides

Servings: 4 to 6

Ingredients:

  • 3 sweet potatoes
  • 1/2 cup sugar
  • 3 eggs
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/2 teaspoon salt
  • 1 1/2 cups flour
  • 2 tablespoons baking powder
  • Vegetable oil, for frying
  • 1 cup granulated sugar combined with 2 tablespoons cinnamon

Instructions:

  1. Roast sweet potatoes at 350°F, with the skins on, until soft.
  2. Allow to cool, then peel and mash in a medium-size bowl. This should yield about 2 cups mashed sweet potato.
  3. Mix in sugar, eggs and spice.
  4. Sift together flour and baking powder, then add to batter.
  5. Heat oil in a deep pot to 350°F.
  6. Drop the batter into oil 1 ounce (about 2 tablespoons) at a time.
  7. Fry until dark golden brown, about 4 to 5 minutes.
  8. Drain and roll hot beignets in cinnamon-sugar.
